Recipes: butter cake bakes
been awhile since I am on a baking spree, this time for finding the best butter cake. I like butter cake with a bit more structure and body and moist(not wet), nothing too light and airy. Below recipe 1 & 2 are good. Definitely need rebakes of the recipe to pinpoint which is better because they are quite similar and both tasty
Recipe 1: (pictured above)
McCormick 9*5 loaf 175C >35 minutes, nice not too sweet(used 180C 1hr mistakenly but tasted ok)
169g butter
160g sugar (ori 300g)
0.38 tsp salt
2.25 tsp vanilla Extract
3 eggs
180g milk
202g flour
2.25 tsp baking powder

Vanilla butter cake, 180C 35-40min, 9*5 loaf. Tested 35+5 min ok. McCormick recipe less sweet and has better taste
However, this VBC taste better on 2nd day
160g butter
114g sugar
0.25 tsp salt
2 tsp vanilla
142g egg without shell
2.1 TBSP milk
133g cake flour
1.4 tsp baking powder

Azie(blend all together) 170C 30min(can try 175C 20-25min), 7inch round pan. Feels a bit dry.
115 gram gula kaster
115 gram mentega – suhu bilik
115 gram telur
110 gram flour + >1.25 tsp baking powder+<0.25 tsp salt
30g susu segar

Chelsea butter cake 9*5 loaf 180C 1 hour, not nice, not tender and quite hard/glutens, whereby you can see the kuih like craters in the cake
60g butter (melted)
150g White Sugar (ori 200g)
Pinch of salt
250g liquid(2 eggs + approx 180g milk)
150g cake flour, (AP flour mixed with 2.5 TBSP corn flour)
1.7 tsp baking powder
Pour liquid ingredients into the dry ingredients until well combined.

Marble cake, 170C tested 39min ok, 9*5 loaf. A bit too light and also quite crumbly, not sure if baking is less will help much and I prefer butter cake with more substance and slight moist. May try reduce baking powder to 1.5 tsp to make it less airy?
Melt 55g choc with 3 TBSP milk
71g butter beat fluffy 95g sugar
<0.25 tsp salt
Add 1 egg+3 TBSP yogurt slowly
115g flour+1.9 tsp baking powder
Split mixture to half, add half tsp vanilla to plain, add chocolate to another
Pour alternately to pan and swirl lightly
